Tokyo has tens of thousands of ramen shops. These 10 have earned their reputation — some have been operating for decades, others have revolutionized the craft. Each is worth a deliberate visit.
1. Fuunji (Shinjuku) — Tsukemen
The tsukemen (dipping noodles) that made Shinjuku famous. Thick, chewy noodles dipped in a super-concentrated blend of pork and fish broth. Get there before 11:30 AM to avoid a 30-min queue. Cash only. ¥900–¥1,100. Closed Sundays.
2. Ichiran (Multiple Locations) — Tonkotsu
Hakata-style tonkotsu with a solo-booth system — individual partitions, custom order sheet (spice level, firmness, richness, garlic, scallion). The most customizable ramen experience. ¥980–¥1,300. Open 24 hours at Shibuya and Shinjuku locations.
3. Afuri (Harajuku/Roppongi) — Yuzu Shio
Light, fragrant chicken-based shio broth finished with yuzu citrus. A complete contrast to heavy tonkotsu — delicate and complex. The cold yuzu shio version (available in summer) is exceptional. ¥1,100–¥1,400.
4. Nakiryu (Otsuka) — Tan Tan Men
Michelin one-star ramen — the only Michelin-starred ramen shop in Tokyo for years. Silky sesame-based broth with a numbing Sichuan pepper kick. Book via the lottery app (available online) or queue at 7 AM. ¥1,050.
5. Kikanbo (Kanda) — Spicy Miso
Miso ramen with four levels of spice and four levels of numbing pepper. Level 4/4 is genuinely painful. The flavor underneath the heat is excellent. Queue expected on weekdays; arrive at opening (11:00 AM). ¥1,000–¥1,200.
6. Nagi (Shinjuku Golden Gai) — Niboshi
Dried sardine (niboshi) broth — intensely fishy and umami-forward. Hidden upstairs in Golden Gai's famous alley. Cash only, 8 seats. Worth the hunt. ¥900–¥1,000. Open until late.
7. Konjiki Hototogisu (Shinjuku) — Hamaguri Clam Shio
Michelin Bib Gourmand. Delicate clam and chicken broth, truffle oil, and seasonal toppings. ¥1,100. Arrive at opening (11:00 AM) — sells out daily.
8. Ginza Kagari (Ginza) — Tori Paitan
Creamy white chicken broth (paitan) with a clean, rich flavor. Two types: clear chicken broth and creamy. Both excellent. In the basement of Ginza corridor. ¥1,100–¥1,300.
9. Menya Musashi (Multiple) — Toripaitan Tsukemen
One of the originators of Tokyo-style tsukemen. The Shinjuku location (Shinjuku Station building) has reliable quality and shorter queues than standalone shops. ¥950–¥1,200.
10. Ramen Karashibi Miso Kikanbo — Sansho Miso
Miso ramen with sansho (Japanese pepper) for a tingling, floral heat. Unlike Sichuan numbness — a lighter, more perfumed spice. ¥1,050. Kanda area.
